Pear Relish
1 peck whole pears (8 quarts)
6 large onions
6 green bell peppers
6 red bell peppers
1 stalk celery
3 cups sugar
5 cups vinegar
1 Tbsp. salt
1 Tbsp. allspice
Peel and core pears. Grind pears, onions, peppers and celery
together. Cook 30 minutes after it comes to a good boil. Seal in jars.
