Sausage Shell Pie
1 lb. hot or mild sausage, uncooked
1 cup crushed crackers
1/4 cup chopped onion
1/2 cup chopped green pepper
1 can tomato soup, divided into half
salt and pepper to taste
1 cup grated cheese
3 cups cooked rice
Combine the sausage, 1/2 can of tomato soup and 3/4 cup of cheese and mix well. Pat into a 9-inch pie pan, just like a crust. In another bowl, combine the rice, other half can of tomato soup, onion, green pepper, salt and pepper and mix well. Place this mixture into the center of the sausage crust and sprinkle with the remaining cheese. Bake uncovered at 350 degrees for 45 minutes to one hour. Cut like a pie and serve hot. Served with a green salad, your meal is ready. This can be made ahead and kept cold until ready to bake.
