Broccoli Cornbread
1 box Jiffy corn muffin mix
10 oz. frozen broccoli
8 oz. small curd cottage cheese
4 large eggs
1 stick margarine, melted
1/2 teaspoon salt
Cook broccoli in microwave according to package directions. Mix Jiffy corn muffin mix, cottage cheese, eggs, margarine, salt and chopped cooked broccoli. Pour into greased and floured 10" x 13" baking dish. Bake 40 to 45 minutes at 350 degrees.
