Tuna Delight
2 cans solid white albacore tuna or 3 large chicken breasts
2 cups cooked rice
1 15-oz. can pineapple tidbits, drained
1 cup mayonaise
1/2 cup pineapple juice
1 tsp. curry powder
salt to taste
1 cup diced celery
1 cup golden raisins
1 cup toasted chopped pecans
1 cup coconut
If using chicken breasts, boil and chop finely. Mix all ingredients well and refrigerate several hours or overnight.
