
Quick Red Velvet Cake
1 box yellow cake mix (2-layer size)
1/2 cup oil
1 cup low-fat buttermilk
2 Tbsp. unsweetened cocoa powder
5 eggs
2 oz. red food coloring
Make and bake the cake according to package directions, substituting the oil, buttermilk, cocoa, eggs and food coloring listed above for the package ingredients.
Cream cheese icing
Cream together 1 package (8 oz.) softened cream cheese, 1/2 box plus 2 Tbsp. powdered sugar (add a little at a time),
1 tsp. vanilla and 1/2 stick softened butter.
