Best Ever Fruitcake
1 lb. candied cherries
1 lb. candied pineapple
3 cups coarsely broken pecans
2 cups plain flour
3/4 teaspoon baking powder
pinch of salt
2 sticks butter
1 cup (scant) sugar
5 eggs
2 Tablespoons vanilla
2 Tablespoons lemon flavoring
In large bowl, cut up fruit. Sift together flour, baking powder and salt. Add fruit to coat well. Stir in pecans.
Cream together butter and sugar. Beat in eggs, one at a time. Add the flavorings. Combine with the first mixture.
Pour into a large tube pan that is lightly greased. Bake at 350°F for approximately 2 hours or until done.
