Turkey Cornbread Pie
1- 6 oz. pkg. cornbread stuffing mix
1 cup boiling water
1/4 cup melted butter
2 Tablespoons oil
1 cup chopped onion
1- 26.5 oz. can spaghetti sauce with mushrooms
3 cups shredded, cooked turkey
1- 8 oz. can red
kidney beans, drained
2 teaspoons chili powder
1 cup shredded cheddar cheese
sour cream (optional)
In a large bowl, combine stuffing mix, water and butter; mix well. Press stuffing into greased 11" x 7" baking dish, forming crust.
Heat oil in skillet; add onion and saute until tender. Add remaining ingredients except cheese; mix well and heat through. Spoon into stuffing crust. Sprinkle top with cheese. Bake at 400oF for 20 minutes. Serve topped with sour cream, if desired. Serves six.
